Frequently Asked Questions
What allergens does this contain?
This product contains sesame and mustard. Anyone with an allergy to these ingredients should not consume this product. Please read the full ingredient list carefully before purchasing, particularly when buying on behalf of someone else.
How hot is it?
Genuinely hot — this is the fiery one of the range. Chilli sits high in the ingredient list and the mustard adds its own sharpness on top. Start with a small amount rather than treating it like a chutney or a relish.
What is it made from?
Raw green mangoes, picked hard and sour rather than ripe, cured in sesame oil with chilli, turmeric, mustard seeds, black pepper, fenugreek, cloves and asafoetida. The mango stays firm and tart rather than softening into sweetness.
How is it preserved without vinegar?
Through salt and oil, which is the traditional method. The salt draws liquid out of the fruit and lowers the moisture it needs to spoil, while the layer of oil on top seals the pickle from the air. No vinegar or artificial preservative is used.
How do I eat it, and how much?
A teaspoon at a time, alongside something plain — rice, a lentil dish, plain yoghurt or warm flatbread. It is intensely salty, sour and hot, so it works as a condiment rather than a side. Always use a dry spoon and keep the pieces under the oil.
