Frequently Asked Questions

What is actually in it?

Four ingredients: forest honey at 47%, mango pulp at 38%, chia seeds at 4% and lemon juice. There is no cane sugar, no pectin, no preservative and no added colour the honey does the sweetening and the chia gives it body.

Why are there seeds in it?

Those are chia seeds, and they are deliberate. They swell and gel in the jar, which is what thickens the spread in place of pectin, and they give a slight texture through what would otherwise be a smooth preserve.

How is this different from an ordinary jam?

Most jams are built on cane sugar with pectin added to set them. This uses honey as the sweetener and chia seeds to thicken, so there is no refined sugar and no setting agent. The result is looser and more spoonable than a firm-set jam.

How do I use it?

On toast, crumpets, pancakes or waffles, stirred through yoghurt or porridge, or spooned over granola and ice cream. It also works alongside cheese, where the mango and lemon hold up against something sharp.
